The Path to Becoming Conscious

I think we are all on the path to enlightenment. We each are on a journey. Where we start and where we finish and everything in between is uniquely personal. The trail to becoming vegan has many mile markers to guide us to health, happiness, awareness and compassion. I hope you will think of me as your fellow hiker, sometimes the guide, sometimes the seeker. I am here with you on your journey.


I started my path with my desire to eat clean and remove as many toxins from my daily life as possible by avoiding chemicals, processed ingredients, antibiotics and hormones that come with eating meat and dairy. My 27 year old daughter and I were roommates and she was as enthusiastic as I was when we realized our new way of eating was expanding the palette of foods we loved rather than restricting it. I love to cook, to choose fresh organic veggies and fruits from small local markets, to chop, to season, to experiment with new recipes. Within a very short time something unexpected happened at dinner one night. We were having Enlightened Miso Power Bowl made with quinoa, sweet potatoes, edamame, carrots, sprouts , hemp seeds, sesame seeds and cilantro with an orange maple dressing. The food we were putting into our bodies changed the way we felt. As we savored our meal we were overcome with emotion. We were overcome with gratitude, happiness, and joy. We felt like our vibration, our life force, our spirits had risen. Have you ever experienced these feelings while eating?


There is increasing evidence that demonstrates similar result; plants are powerful tools to help us fight both depression and anxiety. Plant-based foods naturally lower inflammation in the body because they are naturally low in fat and high in antioxidants. High vegetable intake increased the amount of B vitamins in our blood, which has been found to affect mood. Plant-based diets are helpful in fighting depression because of the connection between healthy gut bacteria and mental wellness. Once people turn to veganism, they usually open their minds to other issues. A greater awareness about how animals are treated, environmental reasons as global warming and deforestation.
